Missi Roti – Protein Flatbread

Cooking Time: About 10 – 15 mins for the dough; 1 minute per flatbread

Missi Roti is a protein rich flatbread from northern India. We have had some delicious restaurant versions but always wanted to try making them at home. That way I could adjust the flavor (more) and greasiness (less) to suit our palates. It’s now a big hit with the kids as well!

  • Use the two main ingredients in following proportions, other ingredients can be varied according to taste – 2 cups whole wheat flour, 1 cup chickpea (besan) flour.
  • Finely chop and add 1 medium sized onion, and 2 to 3 small green chillies.
  • Add 1 tbsp carom seeds (ajwain), 1-2 tbsp garam masala, 1 tsp turmeric, 3 tbsp vegetable oil heated up in microwave for 45 seconds.
  • Mix everything together and slowly add water while kneading the dough. Be sure to add only couple of tbsp water at a time, mix and knead the dough, then add more water if needed.
  • Form a soft dough ball and let it rest covered for 1-2 hours.
  • Make dough balls about 1.5 inch in diameter.
  • Heat a flat pan or electric griddle on medium-high.
  • Spread some wheat flour on a rolling board or clean kitchen counter.
  • Roll each dough ball in some wheat flour and then pat it down into a flatbread with your fingers. Sprinkle more flour if the dough starts to stick to your fingers or the rolling surface.
  • The flatbread can be as thick as regular tortillas or slightly thicker.
  • Roast well on the hot pan/griddle, smearing a bit of ghee or butter on each side.
  • Serve hot with accompaniments of your choice, or eat as is.
