Watermelon Granita

Just two ingredients! Watermelon and lemon/lime juice. Freeze and scrape periodically for this cooling dessert. You will never go back to eating sugary, artificial shaved ice. With some creativity, make your own versions with different fruit combos – watermelon & raspberry, orange & grapefruit and so on.

  • Cut up a sweet watermelon and blend it into juice.
  • For every 2 cups of watermelon, add 1 tbsp or more lemon/lime juice.
  • With a good watermelon, you don’t really need to add sugar. But you can if desired.
  • Pour the juice mixture in a flat glass baking pan.
  • Freeze for about an hour or until the juice just starts to solidify.
  • Scrape with a fork and freeze again for about 30 mins. Scraped material should start to look like shaved ice.
  • Scrape well again and let is freeze up.
  • For serving, take the pan out of the freezer and let it sit at room temperature for a minute or two.
  • Scoop with ice cream server in a small bowl.
  • Garnish with mint and enjoy.

Cooking Time: No cooking. 5 minutes to juice watermelon and freeze it.
