Whether you are feeding 2 or 20, this is an easy salad to put together. Its delicious and nutritious without being overwhelming. Here is the basic recipe along with some ideas for variations and ingredient swaps.

Cooking Time: Less than 30 minutes; stores well in the refrigerator for a few hours
For the salad for about 4 people,
- 4 cups dark salad greens
- 1 cup cherry tomatoes cut into halves
- 1 cup cucumbers chunks, about the same size as tomato halves
- 1 cup mozzarella cheese chunks, about the same size as tomato halves
- 1/4 cup salted or chili lime pistachios
- 1/4 cup pepitas or pumpkin seeds
- 1/4 cup cut dried figs, about the same size as tomato halves
For the dressing make it in the following proportion and use as much or as little as you like,
- 1/3 cup olive oil
- Juice of 1 small lime
- 2 tbsp jalapeno sauce; recommend Cien Chiles Jalapeno sauce
- 1 tbsp yellow mustard
- 1 tbsp honey
- Salt and black pepper to taste
Make a bed of salad greens and arrange the rest of the ingredients on top for a festive look. Whisk together all the dressing ingredients. Alternatively, you can pour everything in a glass jar and shake vigorously until well blended. Pour the dressing over the arranged salad and let it sit for at least 10 minutes before eating.
Try some of these some tasty variations. Use cut up dried apricots instead of figs. Use mild goat cheese instead of mozzarella. Add cut up radishes if you like a bit of zing and color. You can add even more zing by mixing arugula leaves with dark greens.
