Khandeshi thecha is very famous in certain parts of central/western India. This is a little twist on my mom’s traditional recipe. It can be used as spicy salsa with chips, tacos, etc.

This recipe needs several different ingredients that are listed below.
- Green chillis – 17 or 18
- Garlic cloves peeled – 7 or 8
- Roma tomato big – 1
- Salt as per taste
- Oil – 1 tbsp
- Mustard seeds for tempering – optional
Apply oil on chillies, garlic cloves, and tomato. Roast green chillies and garlic directly on fire (gas stove) as shown in the picture. Poke a fork in the tomato and roast directly on fire. Roast till you get black sports on everything. Blend into soup like consistency after it cools down. Add salt. Make a tempering with the oil & mustard seeds. Pour on top. Thecha is ready!
