Nutrition-dense and sinfully delicious, you will feel great about eating this torte. It’s also gluten-free, and a good source of fiber & protein. If you aren’t particularly fond of dates, substitute with organic sugar (usually 2 – 3 tbsp for 8 dates), but eliminating dates reduces fiber and potassium.

Ingredients list is as follows.
- 2 tsp vegetable oil
- 1 tsp apple cider vinegar
- 2 eggs
- 1 cup unsweetened vanilla almond milk
- Pinch of salt
- 2 tbsp sugar
- 8 large dates
- 1/2 cup blanched finely ground almond flour
- 2 tbsp unsweetened cocoa powder (the purer the better)
De-seed the dates and soak for 30 minutes in the almond milk. Run the dates and milk through a mixer/blender to form a runny paste. Mix all the ingredients except the flour & cocoa, whisk well. Mix flour and cocoa. Slowly add to the wet ingredients, folding and mixing carefully. You will get a medium thickness batter. Add a splash of almond milk if too thick.
Grease a baking dish with vegetable oil and some almond flour. Pour the batter and bake at 350 degrees for 35 – 40 minutes. Enjoy!
