This is a perfect summer drink! Enjoy it virgin or with a dash of vodka for a refreshing cocktail. Since you can make a big batch in advance, its perfect for summer parties. Kids and adults can both enjoy their own versions.


- Prepare mint syrup as follows and let it cool to room temperature before straining.
- Add 1 cup water to 1 cup sugar, bring to a boil and then let simmer until sugar is completely dissolved and syrup starts to form.
- Turn off the heat and tear in about 3/4 cup of loosely packed fresh mint leaves.
- Make sure the leaves are immersed well in the syrup. Let it cool to room temperature.
- Strain the syrup, pressing down the leaves and squeezing as much flavor as possible into the liquid. Store in refrigerator.
- To make lemonade, mix equal parts of fresh lemon juice and mint syrup. Add a small pinch of salt and enough cold water. Usually 1 tbsp each in 1 cup water works well. Add more water if desired.
- Add a few freshly ripped mint leaves, stir every thing together and enjoy with or without ice.
- If adding ice, use lemonade ice cubes instead of regular ones. Just pour some lemonade into ice cube tray and let it freeze.
