Asparagus Green Soup

Cooking Time: 20 – 30 minutes

The color and flavor of this soup will win your heart! We like to keep it light and fresh, but you can always add some cream to make it mellow.

  • Chop into small pieces one medium sized bunch of asparagus. Discard the tough ends, which is usually about 1.5 to 2 inches.
  • Finely chop half a medium yellow onion.
  • Crush or finely chop 2 to 3 cloves of garlic; use more if you love garlic.
  • Heat 2 tbsps of olive oil in a broad flat pan on medium heat.
  • Add onions and garlic, saute until the color starts to change.
  • Add chopped asparagus and keep sauteing until there is a nutty aroma; about 2-3 minutes or so.
  • Sprinkle salt and black pepper per taste.
  • Add a cup of water, turn the heat to low and let it simmer for a few minutes.
  • Turn the heat off when the asparagus is soft but not mushy; the color should have only slightly changed.
  • Let it cool down a bit and then blend into a smooth soup.
  • Add more water and/or cream to adjust consistency of the soup per your liking.
  • Adjust salt and pepper accordingly.
  • Warm it up before serving and garnish with Parmesan cheese.
