Some times you just gotta indulge! And this recipe is a win-win with the goodness of cabbage, turmeric & chickpea flour (protein). It is also great for a gluten free diet.
Finely chop half a head of medium-sized cabbage
Cook in the microwave for 3-4 minutes or until it softens a little
Add 1/2 tsp turmeric; salt and chilli powder per taste
Take about 1 tsp carom seeds (ajwain), rub them between your palms and add to the cabbage
Slowly sprinkle 3 tbsp each of chickpea flour (besan) and rice flour while combining well with the cabbage
Sprinkle a little water if the mixture is too dry; you want a thick batter that can be shaped into a flat patty
Cover and let the batter sit for an hour
Heat vegetable or canola oil on med-high
Make small flat patties and fry golden brown
Drain excess oil on a paper towel and enjoy with ketchup!
