Whisk 6 eggs with some salt and black pepper
Scramble them on high heat in a wok with 1 tbsp vegetable oil and set aside
Microwave 2-3 cups of frozen veggies for about 2 minutes
Saute them in the same wok on high heat with 1-2 tbsp oil; about 2 minutes
Sprinkle 1 tbsp sesame oil, 2 – 3 tbsp soy sauce, salt & black pepper per taste
Add back the scrambled eggs and mix with veggies; let cook for 1 minue
Add 4 cups of precooked rice and mix well so the fried rice comes together
Let everything cook for about 2 more minutes while stirring the rice in the wok
Garnish with chopped green onions
Time Savers! Precook rice in Instant Pot. Whisk eggs and store in air tight container in the fridge. We usually do these things in quick 5 minutes before leaving for work in the morning.
