Cooking Time: Less than 5 minutes once beets are steamed. 10-15 minutes for steaming.
A high on flavor cold salad, it’s perfect for the summers. You can have a whole bowl by itself or as a side in your meal.
- Peel and chop 1 beet root into small pieces
- Steam for 10-15 minutes in Instant Pot
- When cooled, mix in 1 seeded and chopped jalapeno pepper, 1 tsp lemon juice, salt and black pepper to taste
- Add a few tablespoons of greek yogurt until the consistency is similar to that shown the picture, and voila!
